Fresh Flaked Granola

This granola recipe is so great. My kids go crazy over it. I fill up a big container and they walk by and grab chunks to nibble on when they are hungry. My son eats it as cereal with milk. and the ingredients really make this snack super filling. We all love it so much. I had it with yogurt and fruit several days last week.


Also if you have an opposition to coconut, leave it out and add more oats! I made this without the coconut and used 1/3 cup more oat groats and it turned out so great!



 

Fresh Flaked Granola

serves 8-10


Ingredients:

3 cups of oats (1 1/2 cups oat groats)

1 cup chopped raw cashews

1/2 cup pumpkin seeds

1/2 cup sunflower seeds

1/4 cup flax seeds

2/3 cup unsweetened shredded coconut

1/2 tsp salt

1/2 cup pure maple syrup

1/4 cup honey

2 heaping tbsp peanut butter

1/2 cup melted butter


Directions:

Preheat oven to 325 degrees. Roll the oats, my oat flaker is set on 5 for a rolled oat. In a large bowl, add the oats, chopped cashews, pumpkin seeds, sunflower seeds, shredded coconut, and salt. Mix together. Melt together the peanut butter and butter in a medium bowl. Add the maple syrup, honey, and melted butters to the oat and nuts. Mix together until well incorporated. Line a baking sheet with parchment paper. Spread out the granola evenly. Bake for 18-20 minutes

Let it completely cool another 20 minutes before breaking apart. Store in an airtight container for 5-7 days.
