Caramelized Onion Cheddar Sausage Crustless Quiche

Let me start by saying that I made this recipe last week and I have already made it again. My whole family devoured it. I made a second one on Sunday as a meal prep option for a quick breakfast. I let it completely cool, covered it, and put it in the fridge. Mark and I got slices throughout the week and it was so nice to just have something that was so delcious, warmed up well, and very satiating! The sweetness from the onions, the saltiness from the sausage, and the cheddar pepper crust on the top is top tier! I know you will love this recipe, I cant wait for you to try it!

Caramelized Onion Cheddar Sausage Crustless Quiche
serves 8
Ingredients:
2 cups sliced kielbasa sausage (precooked)
2 cups chopped kale (no stems)
2 cups shredded aged cheddar cheese ( I love coastal or dublinger from costco)
1 sweet onion
4 tbsp butter
6 whole eggs
1/4 cup milk
1/2 cup heavy cream
pepper for topping
Directions:
Heat skillet on medium high heat. Slice an onion. Add the butter to the skillet and all the onions. Saute for 5-10 minutes, then put a lid on it to make the onion sweat and start carmelizing, and reduce the heat to medium. This can take up to another 10 minutes, just occasionally check and stir them to make sure they arent burning. You know they are ready when they are softer and have a more light brown appearance. Slice the keilbasa and kale.
Preheat oven to 350 degrees. In a deep pie dish, layer the onions on the bottom with any remaining butter in the pan; use that to spread around so the quiche doesn't stick to the pan. Layer kale, then sausage, then cheese. Beat the eggs, milk, and heavy cream together until smooth. Pour the egg mixture over the top. Sprinkle with a generous amount of pepper over the top. Bake 25-35 minutes or until the center is completely set and no longer giggles when you move the pie plate.
