White Chocolate Ginger Muffins

It's Monday, and it's muffins y'all. You may be hesitant about this one. Don't. They are so special. The ginger is so light. The chocolate is the perfect buttery balance to this muffin. The hardest part is peeling the ginger--use a spoon. I was watching The Great British Baking Show Holiday Episodes and a guy made a white chocolate ginger something. And I IMMEDIATELY had to make a muffin with those flavors together. The man was a genius. Because it is fantastic. Also I like this guys vibe.




 

White Chocolate Ginger Muffins


Ingredients:

1/2 stick of melted butter

1/2 cup honey

2/3 cup milk

2 eggs

1 1/2 cup fresh milled soft white wheat flour

2 tsp baking powder

1 tsp salt

2 tbs grated ginger

1 cup white chocolate chips


Directions:

Preheat oven to 350 degrees. Grate the ginger. Use a spoon to peel it, and grate on a microplane. Melt the butter, add it to a large mixing bowl with all of the wet ingredients including the ginger. Mill your flour, and add the dry ingredients to the flour. Add the dry ingredients to the wet ingredients. Mix well. Grease muffin tins with coconut oil, bake for 15-18 minutes.
