Vegan Orange Vanilla Muffins

These are amazing. And the macros are so great, if you're a macro person. I'll post them at the bottom. These are also great for people that are avoiding dairy! Anyways, these are slightly sweet, using natural sweeteners. Anyways, try them!

Vegan Orange Vanilla Muffins


Ingredients:

1/2 cup unsweetened canned coconut cream (thick stuff at the top)

1/2 cup orange juice

1/4 cup pure maple syrup

2 eggs

2 TBS orange zest

1 1/2 cups fresh milled flour- soft white wheat

1/3 cup coconut sugar

3 tsp vanilla

1 tsp salt

2 tsp baking powder


Directions:

Preheat oven to 350 degrees. Mill your flour. In large bowl, add all the wet ingredients and mix. Add flour, then coconut sugar, salt, and baking powder. It will be like the consistency of pancake batter. When you are baking with an acid, you can't add the baking powder in right after the acid, or it will activate right then and make your muffins not rise. Ask me how I know lol. Fill each muffin tin about half way. This is my favorite pan, doesn't stick and easy clean up.

Bake 12-15 minutes.
