We are going to this my saying this is my best work at recreating a muffin from our favorite coffee shop in town. BUT VEGAN. It was seasonal, they just took it off the menu and my son was begging for it. He approves. BUT he says I needed to add more coconut sugar to the top.

Vegan Orange Cranberry Muffins
1/3 cup coconut sugar
1/3 cup pure maple syrup
1 cup unsweetened coconut milk
1/4 cup coconut oil
1/2 cup orange juice ( about 1 orange, cara cara is my favorite)
Zest from one orange
1 1/2 cup fresh milled soft wheat
1 tsp salt
2 tsp baking powder
3/4 cup craisins
top with sprinkled coconut sugar
Preheat oven to 350 degrees.
Cream together coconut sugar, pure maple syrup, and melted coconut oil. Add salt, orange zest and orange juice. Add the egg, flour, and pour in coconut milk. I use canned, so give it a good shake before you open it. Add baking powder, and craisins last. Scoop into your muffin pan, fill about half way, sprinkle with coconut sugar. Makes 12 muffins.
Bake 10-12 minutes. Resist the urge to eat the scalding muffin, and enjoy!
