These rolls are so buttery, slightly sweet, salty from the sprinkle on top. They are beauties and so delicious. I made these in my bread machine. I have a custom setting that kneads for 20 minutes and a first rise for 45 minutes. I threw everything in the machine and pressed a button. It beeped and then I made my rolls. This machine makes bread so simple even when I am not making a loaf!
Sweet Potato Brioche Rolls
16 rolls
Ingredients:
3/4 cup warm milk (but not hot it will kill your yeast)
2 1/4 tsp instant yeast
1 tbsp honey
1/3 cup coconut sugar
4 1/2 cups of fresh milled wheat berries (3 cups hard red)
1 cup puréed sweet potatoes ( about 1 medium/large sweet potato)
1 1/2 tsp salt
2 eggs
6 tbs unsalted melted butter
Directions:
Bake a large sweet potato on 400 degrees for 45 minutes. You can also make this recipe with a left over sweet potato from dinner! Cook until tender. Take the potatoes and blend them to a puree. They have to be very smooth. .
I think a mixer dose the best job to knead the dough, so use a dough hook. Add the flour, 1/3 cup coconut sugar, salt, mashed potatoes, eggs, and melted butter to the mixing bowl.
Warm the milk and add 1 tbsp honey to the cup. Sprinkle the yeast on top give it a stir and wait a few minutes to activate the yeast. It will get foamy and bubble up. Add the milk and yeast mixture to the large mixing bowl with all the other ingredients.
Let the dough knead for 5-8 minutes. Leave it in the bowl, and cover for 1 hour to let it rise. It will double in size.
However, if you are in a pinch like I was, you can use the Zojirushi Bread Machine! You add all the liquid ingredients in first : warm milk, honey, eggs, melted butter, and pureed sweet potato. Add the coconut sugar, salt, and flour. Make a well, add the yeast to the top of the flour. Make a custom setting : Knead - 20 minutes, Rise - 45 minutes. Press Start. This doesn't have to be exactly methodical. You can add the milk and honey first, sprinkle the yeast, let it activate and then add the rest of the wet ingredients, then add the dry ingredients as well. Either is fine.
Preheat oven to 375 degrees after the first rise.
Flour your work surface. Dump out the dough, flour the top of it to keep from sticking. If you use the bread machine, in general most dough will feel more moist because the lid is closed and it traps the moisture. Not a big deal at all, just know that you will need to be generous with the flour when you coat the dough to work with it. It may also be more soft than if you use a mixer.
Work the dough into a large ball and cut the dough into 16 slices. Cut the dough in half, then fourths, then eighths, and then 16 rolls. Fold the dough into itself and work it into a ball. Here is a video to help you.
Place the rolls on a cookie sheet. Let them rest 10-15 minutes. Bake for 12-15 minutes. Brush with butter and sprinkle some Maldon's sea salt.
Optional: IF you want to make these as Brioche Hamburger buns, split in to 8 slices of dough instead of 16. Let them rest 10-15 minutes. Brush the tops with an egg wash and sprinkle sesame seeds on top. Egg wash : 1 whole egg + 1 egg yolk whisked together. Brush on before you bake. Increase the baking time 20-25 minutes.
