Spiced Eggnog Muffins

Y'all. I think that even if you hate eggnog that you would like these muffins. They are fantastic. My husband is a tough critic. I make things all the time, and even if I know it is a full blown 10, he will give me nothing more than a subtle nod. I make the muffins, he eats the muffins, he doesn't really offer me much more feedback than that. BUT THESE. The man told me more than a few times how good they were. So it is official. These are the best muffins that I have made so far according to him. You know what Mark doesn't like? Indie Christmas music. I do. Here you go.

Spiced Eggnog Muffins
Ingredients:
1 stick unsalted butter
1/3 cup coconut sugar
2 eggs
1 1/2 cups fresh milled soft white wheat flour
1 cup of eggnog
2 tsp baking powder
1 tsp salt
1/4 tsp nutmeg ( 1/2 tsp if you LOVE nutmeg)
1/4 tsp cinnamon
Directions:
Preheat oven to 350 degrees. Melt the butter, add the coconut sugar, eggs, and eggnog to a medium bowl and mix well. Add all the dry ingredients. Mix well. Grease your muffin tin and fill each one to a little more than a half. These will make a perfect dozen. Bake for 12-15 minutes.
