Salted Caramel Chocolate Chip Cookies

These cookies remind me of a lace cookie. These are thin and crispy but also chewy in the middle. These are so special, especially with the flaky salt, and the sweet. These are one of my favorite cookies that I have ever made. Those caramels are also on my short list of favorite treats. They are made with coconut cream and coconut sugar, YUM!

 



 

Salted Caramel Chocolate Chip Cookies

Ingredients:

2 sticks softened butter

1/2 cup raw sugar

2/3 cup coconut sugar

2 tsp vanilla extract

2 cups fresh milled soft white wheat flour

2 eggs

1 tsp baking soda

1/2 tsp salt

1/2 tsp baking powder

1 1/2 cups chocolate chips

9 Apricity Caramels cut into pieces

Maldons sea salt


Directions:

Cream together softened butter and sugars. Add eggs and vanilla. Add the flour, baking soda, baking powder, salt. Cream together. Add the chocolate chips. Chill dough for an hour. Chop each caramel into 2 pieces.

Preheat oven 350 degrees. Use a cookie scoop, and scoop balls on the cookie sheet. Add one piece of caramel to the top of each cookie. They will melt down into the cookie. Bake 7-9 minutes. Sprinkle with Maldon's Sea salt.

Let the cookie cool on the cookie sheet a little bit before you move it. The caramel will need to harden a bit.
