This is one of those "let nothing go to waste recipes" and it is incredible. Cut all the ends off of your strawberries. Enjoy the strawberries and and give yourself some probiotic rich vinegar for salads! It is so easy!
Probiotic Strawberry Vinegar
Stems left over from 1 pound of strawberries
Raw Apple Cider Vinegar
1/3 cup organic sugar
16 oz mason jar
Add all the chopped strawberries to your jar, add the sugar, and fill to the top with raw apple cider vinegar. Put the lid on the jar, shake it up to incorporate the sugar. Leave it one the counter for 2-3 days. Strain into a bowl using cheese cloth or paper towel if you have it handy. It may take a few passes to get it really clean. Pour into a bottle and enjoy!
I am going to make a reduction with some vinegar for avocado toasts. But you basically just cook the vinegar in honey or pure maple syrup until it reduces to a syrup. You can drizzle it on top of toasts or even ice cream.
I was also thinking of making a strawberry poppyseed dressing using mayo, strawberry vinegar, honey, and poppy seeds. Or you can just drizzle olive oil and the vinegar straight onto. salad. The flavor is that good! My son loved dipping bread into the vinegar with olive oil and sea salt!
