Perfect Peanut Butter Cookies

We got home from school and my son asked for peanut butter cookies. I have never made peanut butter cookies, but I know the general ratios for a cookie and decided I could figure it out! These did not disappoint anyone! They are absolutely delicious! I hope you try them!



Perfect Peanut Butter Cookies


Ingredients:

3/4 cup coconut sugar

1/3 cup softened unsalted butter

1/2 cup peanut butter

1 tsp salt

1 tsp baking soda

1 tsp vanilla

1 egg

1 cup fresh milled soft wheat (can sub Oat flour for GF)


Directions:

Preheat oven to 350 degrees. Cream together butter and coconut sugar. Add peanut butter, vanilla, and the egg. Add salt, baking soda, and flour. Use a cookie scoop and scoop them out on to a cookie sheet. My favorite cookie sheet is this one! Nothing sticks to it! Bake for 7-8 minutes.

As a refresher, don't link overthink it. The date jumps at midnight, as does the month hand when necessary. That means the small month indicator will always point to the hour on the dial associated with the month of link the year – 1 through 12 or January through December. And while the hand is short relative to the large dial and might leave you guessing "is it January or February?" link you'd eventually get used to it.

I'm so excited to try these with my new grain mill! When you write 1 cup of soft wheat, is that the amount you put into the mill or is the amount that results? I have a table that gives the conversions, and it says that 2/3 cup of grain results in 1 cup of flour. Thank you for your help!

In celebrating its hundredth anniversary, The New Yorker is certainly pulling out all the link stops in the merch department - a collaboration capsule collection with J.Crew has already gone live with some cool pieces.
