Perfect Chocolate Chip Cookies

These cookies are incredible! The absolute best cookies that I have ever made. And I am giving the credit for fresh milled flour. These cookies didn't even last 24 hours in our house. I don't know what that says about us. This recipe makes 30 cookies. I will be waiting awhile to make these again because I do have a few lbs to spare and really lack the self control. BUT DEAR LORD! MAKE THESE! I


Barton Springs gifted this flour to me when I went to visit them and see their mill and operation. Which I will have to do an entire blog post about by itself because they are definitely grain gurus. I really love that company. All the specialty grains had me starry eyed.

BACK TO THIS FLOUR... I put it in the freezer when we got to our airbnb, flew with it home, and put it in the freezer when I got back. And I have been so excited to try it.

Perfect Chocolate Chip Cookies


Ingredients:

3/4 cup softened butter

1/2 cup raw sugar

1/2 coconut sugar

1/2 tbs vanilla extract or vanilla bean paste

1 cup unmilled soft white wheat grain

1 egg

1 tsp baking soda

1/2 tsp salt

1 cup chocolate chips


Directions:

Preheat oven to 350 degrees on convection if you have it.

Cream together softened butter and sugar. Add egg and vanilla and mix. Mill flour on finest setting. Add flour, baking soda, salt. Mix until combined, and add chocolate chips last. This dough will be firmer. Use a small cookie scoop and drop them on a cookie sheet. Bake 12 at a time, and 8-10 minutes. 8 for a softer cookie, 10 for a firmer cookie. Let them cool, and enjoy!

Of course, Craig's favorite is early, pre-standardized Rolex because of their idiosyncrasies – they're very coach built, from link an age when they were still finished and assembled by hand. Meanwhile, I love antique American pocket watches – Waltham, Elgin, Hamilton – they're 150 link or 200 years old and they're just beautiful watches to link work on. As for wristwatches, the Omega 30T2 is one of the best machine-made movements ever made – the most robust repairable, serviceable.
