Oatmeal Raisin Pecan Muffins

It was a dark and stormy night. And we were all sitting around the campfire.

Just kidding, no time for words. These are amazing.

Oatmeal Raisin Pecan Muffins


Ingredients:

5TBS of unsalted butter

1/2 cup pure maple syrup

1/2 cup milk

2 eggs

1 1/3 cups of flour (fresh ground soft white wheat)

1/2 cup rolled oats

2 tsp baking powder

1 tsp salt

1 cup raisins

1/2 cup chopped pecans

1 tsp cinnamon


Topping

3 tbs melted butter

1/2 cup chopped pecans

1/3 cup rolled oats

1/3 cup coconut sugar


Directions:

Preheat oven to 350 degrees. Melt the butter. Add pure maple syrup, milk, eggs into the mixing bowl and mix. Add the salt, baking powder, raisins, oats, pecans, and flour. It will be like a pancake batter. Add the melted butter last.

Grease your muffin tin. I like to use coconut oil spray or old fashioned paper towel and dip in the coconut oil jar. OR I will use my favorite muffin pan and it doesn't need to be greased at all!


Mix the topping in a medium bowl.


Fill each tin half way, and it should fill all 12 muffin tins. Add a heaping tablespoon of topping to each muffin, use it all. Bake for 12-15 minutes. Keep an eye on them and insert a toothpick and when It comes out clean, they are ready.
