Neenaw's Fluffy Pancakes

Neenaw is my husbands grandmother that I knew for many years before she passed. She was sweet as pie. And she made big breakfast most mornings. This is her pancake recipe and I have wanted to convert it to fresh milled flour for awhile now. The baking soda and the club soda are what give these pancakes such a lift. They are so fluffy and light. This is my favorite pancake recipe...maybe it is because I think of her or because they really are special!



 

Neenaw's Fluffy Pancakes

Makes 12 big pancakes


Ingredients:

2 cups fresh milled wheat flour (3/4 cup soft wheat berries, 3/4 cup hard wheat berries) 1 tbsp baking powder

1/2 tsp salt

1/2 tsp baking soda

4 tbs coconut sugar

2 cups of club soda

1 egg

1/3 cup melted butter


Directions:

Mill the soft and hard wheat on the finest setting. Add all the dry ingredients to a large bowl. Add all the wet ingredients. Mix well.


Heat skillet on medium high heat. Once the skillet is hot, add butter or coconut oil to the pan. I use a 1/3 cup measuring cup to scoop out the batter and pour it onto the skillet. Cook a few minutes and you know when its time to flip when you see air bubbles coming through the batter.

Serve up with pure maple syrup!
