Honey Butter Cornbread Muffins

The title says it all. This is southern bliss. It is a perfect sweet and savory bread for bbq, steaks, or even breakfast with some eggs and sausage. It is a family favorite around here.

Honey Butter Cornbread Muffins
Ingredients:
1 stick of unsalted butter
1/2 cup honey
3/4 cup milk
2 eggs
1 cup of flour (fresh ground soft white wheat)
1 cup of fresh coarse ground popping corn
2 tsp baking powder
1 1/2 tsp salt
1 cup frozen corn
Notes on ingredients: Make sure to use popping corn for the corn meal.Yes, the kind of corn you use to make popcorn. It is 1/2 cup of wheat berries for 1 cup of flour. It is 1/2 cup of popping corn for 1 cup of corn meal. Grind on a bread setting.
Directions:
Preheat oven to 350 degrees. Melt the butter. Add all the eggs, honey, and butter into the mixing bowl and mix. Add the salt, baking powder, and flour. Add the milk last. It will be like a pancake batter. Add the frozen corn. Mix until incorporated.
Grease your muffin tin. I like to use coconut oil spray or old fashioned paper towel and dip in the coconut oil jar.
Fill each tin half way, and it should fill all 12 muffin tins. Bake for 12-15 minutes. Keep an eye on them and insert a toothpick and when It comes out clean, they are ready.
