This is the only bulk chicken recipe you need to make several chicken dishes! I use this chicken to make chicken sourcream enchiladas and mexican rice, chicken tacos with black beans, chicken salad sandwiches, bbq chicken sandwiches, and chicken salads. I also just munched on this by itself because it is that good. This recipe is great to make when you have a busy week because it is so versatile. We ate it with bbq sauce on fresh milled buns one night, and I went ahead and made a tray of enchiladas for the freezer. I still had some left over for quick tacos later in the week! It gave my family of 5 (4 eaters) 3 different meals which is pretty fantastic! This recipe is one i come back to again and again! Hope you enjoy it!

Ingredients:
5 lbs skinless boneless chicken breasts
2 tsp salt
2 tsp garlic salt
1 tsp chili powder
1 tsp dry mustard
1/2 tsp coriander
2 tsp italian seasoning herbs
1/2 tsp pepper
1 1/2 cups pineapple juice
Directions:
Pressure cook 45 minutes on high pressure. Once finished cooking, let the presssure release naturally. Take the lid off and press the sauté button to reduce the liquid by half. Shred the chicken.
