Pancakes have always made me feel sick. So much that I haven't eaten them in decades. They always made me feel awful and I think it was because of the blood sugar spike.
THESE DO NOT make me feel sick! They are very well balanced with protein and fiber! These are the perfect breakfast for dinner option when you are running low on groceries or just didn't plan ahead and need something in a pinch! Fresh Milled Protein Pancakes
Makes 18 pancakes
Ingredients:
1 cup soft white grains
1 cup spelt grains
2 tbs sugar of choice - honey, maple syrup, sugar, coconut sugar
1 tsp salt
2 tsp baking powder
2 eggs
1 3/4 cup of milk of choice
3 scoops unflavored collagen protein -- This is my favorite
Directions:
Mill your grains on the finest setting. Add all the dry ingredients to a large bowl. Add the eggs, and milk. Mix well. Heat a skillet on medium high heat. I like to use a dab of coconut oil to keep it from sticking. I use a measuring scoop that is 1/4 cup to scoop the batter into the pan. Flip when you see air bubbles coming through the batter. These will be nice and fluffy! They are packed with extra protein from the spelt and the collagen protein powder! I hope you enjoy!
Note: I added the grain measurement instead of the flour for people that do like to calculate macros, they can easily find the information and add it to the tracker.
I make them with whole milk, and regular sugar and the macros are 1F/14C/5P per pancake.
