Cacio de Pepe Pizza

This is in my family rotation vey often! When we have people over for dinner. this one gets requested! It's such a solid recipe. I am confident that this will be one of your family favorites as well. It is the perfect white pizza. Also you should know that you cannot buy preshredded parmesean for this. It has a coating on it, and it wont melt in your cream correctly! SO get that grater out and do it the old fashioned way! You can also brush a little butter on the crust edges and sprinkle some italian seasoning on it if you want to get fancy.

Its so simple. so special, trust me. Make it!




Cacio de Pepe Pizza


Pizza Ingredients:

Alfredo sauce

mozarella

fresh cracked pepper


Alfredo Sauce:

2 tbsp butter

1 tsp minced garlic

1/2 pint of heavy cream

4 ounces fresh grated parmesan


Directions:

Follow directions for pizza dough. This recipe uses one dough ball that is split into three. While the dough is in the first rise, make the Alfredo sauce on the stove in a saucepan. On medium heat, melt the butter and add the minced garlic. Pour the cream in and grate the parmesan into the cream. Whisk until melted and incorporated. Let it cool while you shape the pizza dough.


Preheat the oven to 450 degrees with stones or cast iron pizza pan in the oven.


Stretch out your pizza dough by hand or use a rolling pin. Place the pizza dough onto parchment paper. Begin assembling by smothering the pizza dough with the alfredo sauce, sprinkle with shredded mozzarella, crack pepper on top. Slide the parchment onto your pizza stone. Bake 8-10 minutes on the middle rack.


**Notes: If you use a different pizza pan, you dont need to preheat it with the oven, and you dont have to use parchment paper to transfer the pizza on the pan. If you use a stone or cast iron, I find that assembling on parchment is helpful in transfering the pizza over to the hot pan when I am baking in my oven.

After a link 2.5-hour drive at the end of day 1, we arrived at a hotel in Kobuchisawacho and rested for our longest day. We got the first glimpse of nature, which inspires so much of Grand Seiko's craft, as we left our hotel. Dazed, a bit jetlagged, and under-caffeinated, I missed the photos of the red pine link forests, but we did get a glimpse of Lake Suwa, link which has (as many other landscape features) been turned into a Grand Seiko dial.
