Vegan Whole 30 Cashew Ranch Dressing

It was a slow autumn day...the clouds laying low and the sun peaking through the trees as the morning began to break into the wind...HA! Just kidding. You know I just give you recipes when it's a recipe post!
BUT YOU GUYS! I can't with this recipe. I'm so stinking excited about this! If you would have told me a vegan, paleo, whole 30 ranch recipe could be this good...I would have called you a liar! I've bought all the healthy ranch dressings for ridiculous prices and been so disappointed each time. This Texas gal knows good ranch...that is for sure. AND I NAILED IT!!! You will not regret making this for a single second! All the ingredients are super fresh and you are nourishing body with each bite!
Vegan Whole 30 Cashew Ranch Dressing
Ingredients:
1 cup cashews ( soaked in 2 cups of water overnight)
2 TBS diced sweet onion
1/2 TSP minced garlic
1/4 TSP smoked paprika
2 TSP of dill
1 TSP parsley
1/2 TSP oregano
1 TSP salt
1/4 TSP pepper
2 TSP lemon juice
1/4 cup reserved water from the soaked cashews
1 cup unsweetened canned coconut milk (give it a good shake before you open it to mix the cream)
Directions:
Put all the ingredients in a high speed blender, and start on a lower speed to get everything mixed. And then I crank it a little bit to get the dressing creamy with a pretty smooth consistency. It makes about 1 1/2 cups of dressing. IF you are feeding a lot of people...double it! But its enough for 4 salads!

P.s. I stored this in a jar in the fridge and the consistency was perfect for dipping when it was cold. At room temperature, its a nice thick dressing!

Anyway, here are a few details I noticed when I held the watch for the first time.
