Troy's Stupid California Dressing from His Uncle's Restaurant

So this is not like any dressing you have ever had. Its the strangest ingredients, and you think...there is no way that I will actually like this. And then...you realize how crazy those thoughts were once you taste it. We had the pleasure of having this is in colorado made by one of my favorite people on the planet. And we had fun being in the kitchen together because we are the same level of particular on ingredients and presentation. You need to make this for your next dinner party! you will be oh so fancy!


 

Ingredients:

1 purple onion

1/2 bushel of cilantro

3 cloves of garlic

3 fresh limes-pressed for juice

1 bag of craisins (6 oz)

cracked pepper

GOOD quality olive oil. Make sure the bottle is dark...cold pressed, organic is best.

Aged balsamic vinegar


Directions:

This recipe should be made at least several hours before its time to eat.I think its better if its made the night before. I like to use a mandolin and slice the onion very thin. Chop the cilantro leaves and garlic. Throw all the ingredients in a bowl...and I don't have measurements on the olive oil or the vinegar because I just eye ball it and taste it. If its too oily, add vinegar...if the vinegar is too strong, add olive oil. The craisins will absorb the vinegar and oh my goodness...you just have no idea how amazing that is. Cover and store in the fridge!
