Spicy Elderberry Vinaigrette

After the Holidays, it is so nice to reset in January. I've been working on several salad recipes that I love and can't wait to share. I've also been able to partner with Sambucol to create some yummy immune boosting recipes. This vinaigrette is so delicious. I love that I am giving my body a little boost of elderberry at the same time! The ingredients are super fresh and I promise you will keep this recipe around longer than the sick season. SO here it is!


 

Ingredients for Vinaigrette:

1/4 of a small sweet onion

1/2 of a jalapeño - add seeds if you want more spice

8 oz of frozen cherries

1/4 cup honey

2 TBS of Sambucol Elderberry Syrup

1 TBS cilantro

1/2 cup Olive oil

1 TBS lemon juice

Pinch of sea salt

* Makes 2 cups of dressing



Directions:

Add the onion, jalapeño , frozen cherries, and cilantro to a food processor. Pulse the ingredients until smooth. Add the honey, elderberry syrup, lemon juice, olive oil, and sea salt. Pulse again to mix together.


ENJOY!



I love to serve this dressing on top of spinach and spring mix with dried cranberries, honey roasted pistachios, feta cheese, and protein of choice!
