Soaked Oatmeal Chocolate Chip Skillet Cookie

This is a great dessert, but if you're a particularly fun mom...THIS CAN BE BREAKFAST! It takes some planning, but it is SO delicious! If you want this for dinner dessert, start the soaking in the morning! If you want it for breakfast, start soaking the night before! Remember soaking breaks down the grain for easier digestion.




 

Ingredients:

3 cups of oats

1 1/2 cups of water + 1 TBS of kefir (can use plain yogurt)

2 sticks salted grassfed butter (melted)

1 cup of coconut sugar

2 eggs

1 tsp vanilla

1 tsp baking powder

1 cup mini chocolate chips

1/2 tsp salt


Directions:

Mix the oats, water, and kefir (Or yogurt) In a medium bowl. Cover with plastic wrap and soak the oatmeal overnight or on the counter for 8 hours.


Preheat oven to 350 when you’re ready to cook. Melt the butter and reserve 2 tablespoons to grease your skillet. Add the melted butter to the oats. Add coconut sugar, vanilla, eggs, baking powder, salt, and the mini chocolate chips last.


Grease your skillet with the reserve butter. Pour the batter into the skillet. Bake 20-25 minutes.





If it is breakfast...because you’re a cool

mom, serve with a glass of milk ( our favorite is raw from a local dairy), some bacon or sausage for a particularly savory balance.


If its a dessert, you can whip heavy cream cream with some pure maple syrup for a topping or just scoop out your favorite ice cream.
