Simple Carrot Apple Summer Salad

This is such a simple and tasty salad. It makes quite a bit, so I would suggest halving the recipe if its just for 2 people. But this salad is easy to eat with a sandwich, or as a slaw on top of fish tacos, And the sweetness of the apple and carrot make it enjoyable for little ones as well.
Ingredients
6 large carrots (I love the tricolor carrots for more color)
2 medium apples
Dressing:
Juice of 1 lemon
1 tsp molasses
1 tsp honey
1 tsp dijon mustard
1/2 cup olive oil
Salt and pepper to taste.
Directions
Finely dice or julienne the carrots and apples. I like to use a chopper. But I have also shredded the carrots and apple with a cheese grater which is great, but depends on what you want and the kind of bites you want!
Add all the ingredients for the dressing and use a fork to whisk it together. Pour some over the carrots and apples and toss. You can add as much or little dressing as you want. But you want it nice and coated. I always a little more salt and pepper after tossing until it is just right. I think it tastes the best after it has marinated together for 30 minutes or so.

So link when I noticed Croatian women's tennis player Donna Vekic rocking an Elegante during her second-round match against Belarus' Aryna Sabalenka, I was surprised. link Sure enough, Vekic has been Journe ambassador for awhile now. All I'm waiting for now link is to spot a Centigraphe on Centre Court. –LB
