Red Wine Tomato Jam


1 honey sweet onion

1 TBS salted butter

2 cups cherry tomatoes

1/4 cup honey

2 oz red wine

pinch of salt


Slice onion and sauté on low with salted butter. Cover with lid and stir occasionally. Let the onions caramelize, it will take some time, don't rush this part, low and slow is the name of the game. It will take around 15 minutes. Add the tomatoes and wine. Cover on low again. When the tomatoes start to split, uncover and increase heat to medium heat. Add honey and pinch of salt. Reduce the liquid. Add the jam to a food processor and pulse it all together. Just a few pulses, don't puree. Pour into a mason jar and allow it to cool. Store in the refrigerator.

This is amazing on avocado toast with sourdough bread. It is incredible on a BLT. I promise you won't be disappointed! THIS IS AMAZING! I made it for quick lunches or breakfasts. I felt so fancy and transported to an overpriced cafe where I would absolutely pay $12 for this exact situation.
