Raw Peanut Butter Elderberry Bars

1 cup raw unsalted peanuts

1/2 cup raw unsalted cashews

1 cup dates 2-3 Tablespoons Sambucol Elderberry Syrup- Kids 1/4 tsp pink himilayan salt

1/4 cup dehydrated blueberries (sweetened with juice)

Optional toppings: Mini chocolate chips, bee pollen, edible flowers (my kids go crazy over that), sprinkles


In a blender or food processor, add the nuts and dates and pulse until everything is chopped. Add the lovely elderberry syrup and salt. Blend or process until its mostly smooth with some small bits for texture. Scoop out into a bowl and fold in the blueberries. It will be very thick and sticky.

Get a square or small rectangle dish and coat it with coconut oil. Spread the mixture into the dish, firmly pressing it together. Refrigerate for 30 minutes. Then cut them into rectangles.

Plate them and add toppings! Enjoy!
