Orange Honey Chicken

If you are busy, this meal is for you! It was born on a crazy day, no plan, and frozen chicken.
And I had to start it and let Mark finish it because I had to run out the door! It is so easy, and simple, nothing crazy. You do need an electric pressure cooker though.

Ingredients:
1 1/2 - 2 pounds of chicken breasts (frozen)
2 cups orange juice
1/3 cup soy sauce (Tamari if gluten free)
1/4 cup honey
a few dashes of fish sauce (optional)
Directions:
Dump all the ingredients into the electric pressure cooker. Seal the lid. Cook on high pressure for 25 minutes if frozen. Set it and forget it. When its done, shred the chicken up and let it absorb the sauce. If the sauce is watery, push the sauté setting and reduce it a little bit
Make some rice, sub bone broth for the water, and steam some veggies. Top with sesame seeds for some crunch. Dinner is served!
Pro tip: When I make rice, I add the steamer basket to the top of my rice pot, and put the lid on it. As the rice cooks, its steams the veggies and I don't have to wash more dishes. Small miracles my friends.
Eliminating reflections just takes practice, and I've had plenty of link situations in which I could not get an outdoor wrist shot without them. You may look very silly adjusting your stance for that ideal blend of light link and dark, but I assure you that it link gets easier (or maybe you just stop caring about how you look).
