THESE! so simple. so delicious. You probably have these ingredients lying around so no special trips to the grocery store. The coriander elevates this simple muffin into something so special. My family gobbled half the pan after I pulled them from the oven. I bet yours will too.
Maple Coriander Muffins
Ingredients:
1 stick of unsalted butter
1/2 cup pure maple syrup
1/2 cup milk
2 eggs
1 1/2 cups of flour (fresh ground soft white wheat)
2 tsp baking powder
1 tsp salt
3 tsp coriander
*top with some sprinkled oatmeal
Directions:
Preheat oven to 350 degrees. Melt the butter. Add all the wet ingredients into the mixing bowl and mix. Add the salt, baking powder, and flour. It will be like a pancake batter.
Grease your muffin tin. I like to use coconut oil spray or old fashioned paper towel and dip in the coconut oil jar. I just got a USA muffin pan, I am shook at how easy these muffins pop out. I don't have to grease them, and they wipe clean--no soaking and scrubbing. Best muffin pan that I have ever had. Link here.
Fill each tin half way, and it should fill all 12 muffin tins. Bake for 15-20 minutes. Keep an eye on them and insert a toothpick and when It comes out clean, they are ready.
