Kefir Soaked Pancakes

If you love sourdough pancakes, you will LOVE these. And soaking the grain unlocks more nutrition and predigests it, so that you can get the most out of your food without all the bloat. So here we are, with my favorite pancakes I have ever made...and I am sharing the love!

Ingredients:

2 cups of organic flour

2 cup of kefir

2 eggs

1 tsp vanilla

2 tsp baking powder

1 TBS of honey

1/4 tsp salt

Directions:

Mix the flour and kefir together in a medium mixing bowl. Cover with plastic wrap/cheese cloth/kitchen towel overnight or about 8-12 hours.

In the morning add the vanilla, baking powder, honey, salt and mix together with a spoon. I add the eggs and use a fork to incorporate.

Butter a skillet. Use a ladle and start cooking!

These pancakes are so fluffy and delicious. They are thicker, so medium heat is best. And you know it is time to flip when you see air bubbles come through the batter.

Slather on some grass-fed butter and real deal pure maple syrup.

Wham. bam. thank ya. mam.

All the love!

- Michal
