Fresh Milled Chocolate Protein Cake

This cake is a solid play. We had it for breakfast and snacks. It is not too sweet. The chocolate on top makes the cake feel like a true a dessert, which I love! My favorite recipes are ones that make go...is this dessert or is this healthy food? And the more I can blur those lines with my recipes, are a big accomplishment. I love my healthy food to be so good, that it might also feel like a treat.


But I am going to give you some advice. Put parchment paper in the pan just to help you lift it out of the pan. I was in a hurry and was not forward thinking. So I had to do It the old fashioned way and get chocolate everywhere. So the strategy is to put parchment across the bottom so that it wraps under the cake for an easy lift! Here is a video !


Also using my favorite pans, and this 1.5 lb loaf pan is perfect for this recipe! It slides right out!


 





 

Fresh Milled Chocolate Protein Cake


Ingredients:

2 tbsp melted unsalted butter

1/2 cup 0% plain greek yogurt

3/4 cup pure maple syrup

1/2 cup milk

2 eggs

20 grams collagen peptides protein powder (4 tbsp)

2 1/2 cups (275 g) fresh ground soft white wheat flour

2 tsp baking powder

1 tsp salt

1 tsp vanilla

1/2 cup milk chocolate chips

1/3 cocoa powder


Directions:

Preheat oven to 350 degrees. Mill the grain on the finest setting. Melt the butter. Add the flour and all the dry ingredients, including the collagen peptides, to a large bowl. Add the melted butter, eggs, milk, and pure maple syrup, and vanilla. Mix well. Pour into a non stick 1.5-2 pound loaf pan. Sprinkle the chocolate chips all over the top. Bake for 35 minutes. Insert a toothpick in the center, and when it comes out clean, it is done.


Allow to cool completely before you slice it. I like to remove it from the pan before I slice because I don't want to scratch my pan.


Just a side note, you can totally add more protein to the cake recipe. I'm going to try adding more on my next batch and see which one I like the best!


So this makes 12 slices of delicious chocolate bread. The macros are 38c/8p/6f per slice. And it is pretty delicious! It tastes like a coffee cake and I loved having it for breakfast with some coffee and collagen peptides mixed in. Between my coffee and my slice, I had 28 grams of protein and was out the door!
