Fresh Milled Chocolate Chip Mini Bundt Cakes

This is a lighter cake, and we actually ate it for breakfast one morning. But these would be perfect fo a Sunday dinner dessert. Top with home made whipped cream or ice cream, and there you have it folks. A quiet moment where no one complains. Just happy bellies!



 

Fresh Milled Chocolate Chip Mini Bundt Cakes

makes 6 mini bundts


Ingredients:

1 stick of melted unsalted butter

1/2 cup pure maple syrup

1/2 cup milk

2 eggs

1 1/2 cups fresh ground soft white wheat

2 tsp baking powder

1 tsp salt

1 tsp vanilla

1/2 cup milk chocolate chips


Directions:

Preheat the oven to 350 degrees. Mill the wheat berries on the finest setting. Add the flour, salt, and baking powder to a large bowl. Add the maple syrup, milk, eggs, and vanilla to the dry ingredients and mix well. Add the melted butter and mix well. Add the chocolate chips last. Pour into a mini bundt cake pan, fill about half way. This is the one I like, it bakes super well, evenly, and the cakes slide right out! Bake for 12-15 minutes.
