Elevated Egg Salad

okay, I am not crazy about egg salad, but I am crazy about this egg salad. It is ridiculously good. It is so easy and will make you feel like you are eating at a fancy bistro. If you like egg salad, this is a must try! if you love dill, you will be obsessed with this! It is also such an easy quick lunch! I like to eat it with Simple Mills Almond Crackers or a slice of fresh milled bread!

Elevated Egg Salad

Makes enough for 2 sandwiches


Ingredients:

4 hard boiled free range eggs

2 tsp dijon mustart

2 tsp avocado oil mayo

1 tbs chopped fresh dill

1 tbs chopped chives

2 tbs diced pickled red onion

2 tbs pickled red onion juice


Directions:

Hard boil the eggs, remove the shell. Cut the eggs in half, and remove the yolks in a small bowl. Add the whites in a medium bowl. Add the mustard, mayo, dill, chives, pickled onions, and pickled onion juice to the yolks. Mix the yolks with a fork until nice and smooth. Use a fork to "dice" the whites into small pieces. Add the yolk mixture to the whites. Mix together and ENJOY!
