Caramelized Onion Whipped Feta

Whipped Feta!? Who would have thought! I had seen several recipes throwing the concept into my mind and it was blown. I had to try it and ended up making this version keto-friendly. So it is rich. And delicious. You can eat this as a dip with crackers or pita. I ate it on my hamburger as a spread. But you can also blanche some green beans and use it as a dip! really any raw vegetable could carry this dip into Flavortown. You just need a food processor!
Ingredients:
1 small or medium yellow onion
1 - 8 oz package of organic feta cheese
1/4 cup olive oil
1/2 cup organic heavy cream
1 TBS honey
Directions:
Slice the onion in half and make slices. In a medium skillet, add 1 tablespoon of butter. On low- medium heat, add the onion slices and cover with a lid. Stir here and there to prevent any burning, but low and slow is the key to caramelizing. It takes about 20 minutes.
When the onions are done, allow to cool. Add the feta and olive oil, pulse to break it up and get it smooth. Add the heavy cream, honey, and almost all of the caramelized onions. Reserve a few tablespoons for the top when you serve it. Process until its nice and smooth. Pour into your serving bowl and top with the remaining caramelized onion. You can serve right then, or chill it for about 30 minutes for a firmer dip. When its time to serve, drizzle with olive oil and enjoy!!
