Freshly Milled Garlic Bread Sticks

My pizza dough recipe is very versatile. I used that dough recipe for the bread sticks and everyone loved them! These are perfect for a pasta night! I used my bread machine on a custom setting with just a knead and rise. So when it beeped after the first rise, I popped it out, rolled, shaped, and baked. That custom setting really helps make these things more passive while you get on to doing other things! I use it all the time to make dinner rolls, kolaches, pizza, french bread, hot dogs, hamburger buns, and now breadsticks. The only thing you may need is the hotdog pan and a scale. I make hotdog buns often and slide them into freezer bags for when the moment arrives. So it may be worth snagging now that it will have more than one purpose! Freshly Milled Garlic Bread Sticks
servings : 10
Ingredients:
2 cups of warm water
2 tbs honey
1/2 TBS salt
1/3 cup olive oil
1 1/2 TBS instant yeast
3 cups unmilled hard white wheat
Garlic Butter
1/3 cup of melted unsalted butter
1/4 tsp garlic salt
2 tsp parsley
2 tsp minced garlic
Directions for Bread Machine:
Mill the wheat on a bread setting.
Add the warm water, honey, salt, and olive oil to the bread pan
Add the flour on top of the liquid ingredients
Make a well for the yeast
Close the lid and press start
*Custom settings: Knead - 20 minutes, Rise 1 - 45 minutes
Use a scale to measure the total amount of dough in grams. Divide that by 10 and that is how much each dough ball should weigh. My dough balls were around 113 grams, yours may be more or less and that is okay!
Divide the dough, roll the dough into rectangles about the length of the hotdog pan.
Roll the rectangles into logs and fold the ends under, and place seam side down in the hotdog pan.
After the dough is shaped, preheat the oven to 375 degrees
Cover and let rise another 15-20 minutes in a warm place
Brush the bread with about half of the garlic butter mixture
Bake for 18-20 minutes or until internal temperature is 190 degrees
Once the bread is done, brush with the remaining garlic butter while it is still warm
Enjoy!
Directions with Mixer or by Hand
Mill the wheat on a bread setting

Add the flour and yeast to the wet ingredients.
Knead by hand or with a dough hook until smooth and elastic (about 6-8 minutes)
Let it rise in a warm place until it is double in size (about 20 minutes)
