Heartwell Bread Recipe

I want to tell you about a grain that I have loved baking with! I love it for the flavor, the performance, but also the health benefits. It is called Heartwell, and is being sold through Barton Springs Mill. This grain is organic, but most importantly it is a hard purple wheat which has 3 times antioxidants than standard wheat. There really isn't anything like it. Antioxidants are a key part of supporting the body for many reasons. Antioxidants prevent cellular damage linked to chronic diseases such as cancer, heart disease, and diabetes. They do this by donating electrons to unstable molecules, reducing oxidative stress and supporting overall cell health. Standard wheat has great antioxidants when milled fresh, this is just a grain that packs more of a punch! I am sharing a recipe that we have made in the bread machine several times now! There are instructions for the bread machine and by hand! I hope you try it!



Heartwell Bread Recipe

serves 12


Ingredients:

  • 2 cups of unmilled hard white wheat

  • 1 cup of unmilled heartwell hard purple wheat

  • 1 1/2 cups of warm water

  • 1/3 cup melted coconut oil

  • 1/4 cup honey

  • 1 egg

  • 2 tsp salt

  • 2 tsp lemon juice

  • 1 tbsp instant yeast


Directions for Bread Machine:

  1. Mill the wheat on the bread setting

  2. Add the warm water to the bread pan

  3. Add the melted coconut oil, honey, egg, lemon juice, and salt to the water.

  4. Add the flour, make a little well at the top of the flour and pour in the yeast.

  5. Use a custom setting of :

Preheat - 18 minutes

Knead - 22 minutes

Rise 1 - 45 minutes

Rise 2 - 6 minutes for dry climate or 12 minutes for a humid climate

Rise 3- off

Bake- 46 minutes

Keep warm- off

  1. Press start. Let the machine do the work. Slice and Enjoy!


Directions by Hand:

  1. Mill the wheat on the bread setting.

  2. Add the warm water to a large bowl. Add the melted coconut oil, honey, egg, lemon, and salt to the water.

  3. Add the flour and yeast.

  4. Knead the dough 8-10 minutes by hand, or 6 minutes in the mixer. The dough should pull away from the bowl.

  5. Cover and let it rise for 45 minutes or until doubled in size.

  6. Punch the dough down, shape it to your loaf pan.

  7. Let it rise again for 15-20 minutes covered and in a warm place.

  8. Bake at 350 degrees for 30-35 minutes in a 2 lb loaf pan or until the internal temperature is 190 degrees.

  9. Slice and enjoy!

I prefer to buy straight from the farmer. In this case, the Puprle Heartwell that Barton Springs Mill sells is grown AND sold by 4 Generations, so I buy it straight from the source! It is an amazing grain to use!
