Fresh Milled Spelt Chocolate Banana Bread

So, you want to whip up something delicious with some over ripe bananas? That your family will devour faster than a pack of hungry raccoons at a trash can? This is the recipe. This recipe is not only delicious but also packed with the goodness of fresh milled spelt grain . It is a good source of magnesium, manganese, phosphorus, zinc, and iron (important for energy, immunity, and oxygen transport). All of this means you can feel a little less guilty about that third (or was it fourth?) helping. My family did attack this loaf. So think that is a sign to make it!
Fresh Milled Spelt Chocolate Banana Bread
Serves 10-12 slices
Ingredients:
3 large very ripe bananas
1/2 cup pure maple syrup
1/3 cup melted coconut oil
2 eggs
1 tsp vanilla bean paste
1 cup unmilled spelt grain
1/3 cup black cocoa powder
2 tsp baking powder
1/2 tsp salt
1/2 cup semi sweet chocolate chips
Directions
Preheat oven to 350 degrees.
Mash the bananas in a large bowl.
Add maple syrup, eggs, and vanilla bean paste and mix.
Add the coconut oil once it isn't piping hot and mix.
Mill the spelt grain on the finest setting.
Add all the flour to the wet ingredients with the cocoa powder, baking powder, and salt.
Once everything is combined, add the chocolate chips and stir.
Line a 9x5 loaf pan with parchment paper for an easy lift out of the pan. Add the batter and spread evenly.
Bake for 40-45 minutes or until the internal temperature reaches 200 degrees.
