5 Seed Energy Cookies

Seed cycling! It's all the rage right now. I'm always a little resistant to fads and trendy things but I do love some good seeds and I love a good cookie. The premise of seed cycling is that you eat certain seeds at certain points in your cycle and it helps detox and support your hormones that seem to be a good aid in healing hormone imbalances. Now I am not claiming that these cookies do such a thing. But it gave me the idea to create a cookie that has all the seeds with milled whole grain barley and oat groats. Not only are these absolutely delicious, but they genuinly provide great energy. My kids ate them for breakfast or before sporting events and felt very supported and energetic for their workouts. I also ate one as a "pre-workout snack" and found that it was perfect. You definitly don't need to have hormone issues or workout to eat these cookies. They are so tastey to just enjoy for no reason at all.

5 Seed Energy Cookies

makes 14 large cookies


Ingredients:

2/3 cup hulley barley grain

1/2 cup whole oat groats

3/4 cup coconut sugar

1/4 cup honey

8 tbsp melted butter

1 tsp salt

1 tsp baking soda

1 egg

2 tbsp vanilla extract or 1 tbsp vanilla bean paste

1/3 cup sesame seeds

1/3 cup flax seeds

1/3 cup pumpkin seeds

1/3 cup hemp seeds

1/3 cup sunflower seeds

1 cup chocolate chips ( topping)


Directions:

Preheat oven to 350 degrees. Mill the barley and oat groats on the finest setting. In a medium bowl, add all the dry ingredients and mix together. Add all the seeds. Add the melted butter, honey, vanilla, and egg and mix well until combined. Line a baking sheet with parchment paper. Use a 3 tbsp cookie scoop and press them into balls. The batter will seem loose and that is okay. Add chocolate chips to the top of the cookie dough balls. Only bake 6 cookies on a sheet as they will need room to spread. Bake 10-12 minutes on middle baking rack and let them completely cool before you move them!
