Spelt Gingerbread Muffins

Did I listen to Christmas music while I created these? I may have. Did I enjoy every second? you can bet your boots on it. I'll link my favorite Christmas station here just in case you want to imagine Thanksgiving is already over, there's snow on the ground, and your trying to keep your fire going. Also my first go at creating this recipe was not great. Flavor was there, 100%. But this is the first time since I have started this series that I had to try again. Also if you have special requests for a muffin recipe, let me know! I am happy to create on for you that has fresh milled flour and doesn't have refined sugar!
Also these are completely delightful. We discussed making an icing, but ultimately they can stand on their own just fine. Why ruin a good thing.

Spelt Gingerbread Muffins
Ingredients:
1/4 cup butter
1/3 c molasses
1/4 c pure maple syrup
2/3 c coconut sugar
1/2 tsp cinnamon
1/2 tsp clove
1/4 tsp all spice
2 tbs grated ginger (microplane)
1/2 cup of milk
2 eggs
2 tsp baking powder
1 3/4 c fresh milled spelt
1 tsp salt
Directions:
Preheat oven at 350 degrees. Grate your ginger, I use a microplane for a fine grate. melt the butter, add molasses, maple syrup, coconut sugar, cinnamon, clove, all spice, grated ginger, and eggs. Mill your flour, add baking powder and salt to the flour, all to the liquid mixture. Add milk last.
Grease the muffin tin with coconut oil or butter, or use muffin paper. Fill each 3/4 full, will make a perfect dozen. Bake 18-20 minutes.



I've learned to appreciate (and occasionally love) the artistry involved in making a gem-set watch, but for me, link it can't compare to the talent required to accomplish this dial. This is the first time Vacheron has combined gem-setting and grisaille enamel, and while in Vacheron's pictures, the dial trended more green, here it seemed more blue to me.
