Gluten-Free Chai Spiced Chocolate Chip Cookies


Who loves chocolate chip cookies? Who loves some good chai? Who likes to bake cookies and also eat them...and loves that there is actual solid nutrition in them? Who tries to avoid refined sugar but doesn't want to completely miss out on a treat every once in awhile?


What if I said these cookies support your gut health. What if I said these cookies support your immune system. What if I said these cookies have ingredients that support healthy skin elasticity, gut lining, hair growth, nail strength, bone formation, and joint health.


These are all the reasons why I love to cook and bake with ingredients that support my health. And I’m shooting for longevity folks! Longevity packed with activity. Remember that time I was basically bed ridden for a year? Yea...I’ve got a lot of life to make up for!


These are the perfect holiday cookie. You can rest assured in the ingredients. Your kids can enjoy them without in the interference of their immune system function, behavior, or attention span! As always, these are gluten-free, paleo-ish, and refined sugar free! They also have a little pump of protein, healthy fats, and fiber to keep your blood sugar stable. Gluten Free Chai Spiced Chocolate Chip Cookies


Ingredients:

2 cups almond meal

2 scoops Multi-Collagen Peptides (I have been enjoying Ancient Nutritions)

1/2 c oatmeal

1/2 c grass fed butter ( the yellower the better!)

3/4 c coconut sugar

2 tsp chai spice ( Spice Walla Chai Masala is the best I've ever tried)

1 tsp vanilla

1/2 tsp baking soda

1 egg + 1 egg white

1/4 tsp salt

1 cup milk chocolate chips ( Lily's Chocolate Chips are AMAZING! and NO SUGAR!)


**Notes on ingredients : You can find Lily's chocolate at Sprouts, Natural Grocers, and Market Street if you are local! Their chocolate bars are so legit, and got me through potty training my daughter. It was for the both of us.

The chai spice is also on Amazon and free shipping! If you love chai tea, go ahead and get this stuff. I've been enjoying at home chai tea that is so much better than any coffee shop or store bought. Actually, the chocolate chips...collagen...and chai spice are all on amazon if you want to skip the store completely, sooo yay!


Directions:

Preheat oven to 350 degrees. Cream together butter, coconut sugar, vanilla. Add egg and egg white. Stop mixer and add all the dry ingredients to the bowl: Almond meal, collagen peptides, oatmeal, baking soda, chai spice, and salt. Turn mixer back on to incorporate. Add chocolate chips last and just stir to combine. Line baking sheet with parchment paper. Use a cookie scoop and give each cookie about 2 inches between each other to spread.

Bake for about 8 minutes.
