Muffin Monday! its 11:19 pm, technically still Monday, HA!
STREUSEL! CARAMEL! APPLES! Thats all I'm saying. It is still fall and I am doing the seasonal thing with the muffins. My kids ate 7 of these muffins the day they came out of the oven. So there's your official stamp of approval. Let me know if you make them!
Caramel Apple Streusel Muffins
Muffin Ingredients:
1/4 cup unsalted melted butter
1/4 cup pure maple syrup
1/2 cup caramel sauce
1/4 cup milk
2 eggs
1 1/2 cups fresh milled soft white wheat
2 tsp baking powder
1 tsp salt
1 tsp vanilla
Struesel Topping:
Medium apple chopped
1 cup rolled oats
1/4 cup coconut sugar
2 tbs melted butter
pinch of salt
Caramel Sauce:
1 tbs butter
1/2 cup coconut sugar
1 can full fat coconut milk
1 tsp vanilla
pinch of salt
Directions:
Caramel sauce - In small sauce pan, on medium high heat, add the butter and coconut sugar. Let it get all nice and melty, add the coconut milk and whisk. Boil and reduce the liquid into a a syrup consistency.
Streusel topping - Peel and core the apple. In a food processor, add the apple and pulse until its in smaller bits. Add the melted butter, oatmeal, coconut sugar, and salt. Pulse until combined.
Muffins - Preheat oven to 350 degrees.
Melt butter, and add all the wet ingredients into a medium bowl. Mix well. Add all the dry ingredients into a bowl and then add to the wet bowl. Grease muffin tins. I like to use coconut oil spray or just use a paper towel and dip into my coconut oil, and rub it into the tins. OR just buy yourself these amazing non stick and nontoxic muffin pans and never grease another one again. Fill the tins about half way. It will make a perfect dozen. Add a tablespoon of streusel topping to each muffin. and another tablespoon of caramel sauce on top of each muffin. Bake for 15-18 minutes.

The texture on these is amazing! I did add an extra 1/4 cup of coconut sugar as my children’s pallet needs to be adjusted to appreciate lightly sweet muffins. They still were not overly sweet. I hope I did the Carmel sauce right; I added the other ingredients after the sugar started to smell “browned.” It tasted great so I guess the way I did it was fine:)
